Another week has come and gone and I can’t believe that we are nearing the end of 2013. Here I am once again this week sharing things that have come and gone in my world. Won’t you link up with Doodle Bugs Teaching if you have a chance?
Hubby and I have decided that due to my dietary issues with dairy, soy and gluten that we are going to start trying to introduce the Paleo Diet into our lives. It is high in protein and Dairy and Gluten Free. There have been several studies on how beneficial it can be for women with PCOS as well.
I will admit, I am a LAZY cook! If it can all be dumped into a pan, pot, etc. together than that is perfect for me. This week we tried the Crock Pot Paleo Enchilada Chicken Stew. Umm, let me tell you this was EASY! Next time I may add a bit more chili powder or add some taco seasoning because I felt it needed to be a bit more flavorful but that was all. Definitely a great and easy go-to recipe!
I have several other recipes that I am waiting to try and have started a Pinterest board just for Paleo Recipes.
With all the deadlines I have ahead of me I have been spending a lot of time at my desk this week. Double digit hours to say the least. Thankfully I get to work in my pajamas and the interruptions from Black Friday and Cyber Monday shopping have had me getting up to meet UPS, FedEx and USPS.
Speaking of Black Friday shopping… I did a number at Old Navy and when my box came in on Thursday I couldn’t wait to get a pair of my new fuzzy socks on! I’m telling you these are the best ever and they are so warm. I grabbed the Owl and Fox styles which I noticed that they are out of but they still have some great styles and they are worth every penny! (Pic will take you to the link.)
Besides working on my normal everyday projects and creating the Interactive Notebook Units for middle school math, I have several workshops coming up in January that have also requested curriculum made for them. I’ve started working on the first of four full-year Interactive Notebooks and I am so happy how it is turning out. Getting me out of my comfort zone and truly digging into other curriculum standards.
Early this morning (about 4:30am) I snapped this picture before heading to bed. Yes, I know… I ended up sleeping until noon! The ice storm has hit us hard here in the Dallas area. Hubby had no choice but to go into work and my car door was frozen shut. Oh well, another day at home with the furbabies.
Who knows what the weekend will bring because our plans have been put on hold because of the ice storm. I’m okay with just staying home and warm while working on my special project.
